辣度等級：不辣 😋

日本是最懂得吃鰻魚的民族，
對於蒲燒鰻，他們不追求大，
而是追求一種肉質最好、最彈牙、刺極少、
能全然展現鰻魚美味的規格。
而我們，也只取用外銷日本的規格來烹調。

流水不息，替新鮮到貨的鰻魚徹底洗澡，
輕柔刮下所有雜質，只保留最純淨完美的肉身。
豪邁灑酒去除腥味，再送入蒸籠做一遍三溫暖，
接著轉往烤箱替表皮上色。
當一整排鰻魚呈現微微金黃的色澤，
浸入另一邊盛好特調的醬汁的淺盤中，
最後一道燉煮工序也絲毫不能馬虎，
持續的文火，保持醬汁不煮滾的狀態，
才能在入味的同時，也保持肉質的Q嫩。

經歷燙、刮、蒸、烤、煮五道工序，
鰻魚早已披上焦糖般的外衣，
挾帶外酥裡嫩的口感，
鰻魚的香氣絲毫不被醬汁掩蓋。
這樣的工法和口味，
是在京都懷石料理中偶然才會出現的特品，
料理人和饕客一旦嚐過便很難忘懷。

蒲燒鰻主體在鰻肉，理應他是主角，
不是油脂也不是醬汁；
魚太大，則肉軟刺粗無口感，油脂多則失去肉香。
我們精心力作「京燒鰻」，
再搭配以鰻魚和鰻魚骨燉煮的特製燒烤醬，
肉質Q彈，鰻香四溢，醬汁襯托出層次，
期待您重新認識獨樹一格的日式蒲燒鰻。

【注意事項】
鰻魚已去除大骨大刺，但仍有細微的小刺，雖經烹調過易碎易消化，孩童長者或口腔敏感者食用時還是要多加留意喔！

◎料理建議：
平日保存請冷凍，食用前請充分解凍。可切片冷食，也可再以烤箱加熱，淋上燒烤醬，搭配白飯食用。
